2 cups cooked low protein rice
1 1/2 cups fresh broccoli
1 1/2 cups fresh cauliflower
2/3 cup cream of mushroom soup
1/4 cup canned mushrooms
1 cup water
2 TB cheddar cheese
1/2 stick butter
salt and pepper to taste
Cook rice. Cook broccoli and cauliflower until tender.
In casserole dish, mix mushroom soup, water, cheese, mushrooms, butter, salt and pepper together. Add cooked broccoli, cauliflower, and rice. Mix well.
Bake for 30 minutes at 350 degrees or until bubbles around sides.
